His job is a unique one, only suited to a very particular sort of person and skill set; there's no doubt he works hard to keep the animals safe and happy in their foreign environment - and they look it, which impresses her. While his boss may only be concerned with profit; at least the animals have someone like Muldoon to look after them. And, if given half the chance; Yennefer would absolutely advocate for them as well.
